1200 XXIII Rosado mineral Each variety undergoes its own1200 XXIII Rosado is a clarete from the Alpujarra Granadina, made from Jan Blanco, Jan Tinto and Vigiriega. The grapes come from 70 year old vines planted on slate soils at 1,200 metres, a height that helps keep freshness and balance in the wine. After whole cluster pressing, the wine ferments in clay amphora and then rests for 12 months in small 54 litre demijohns. This careful ageing gives it a calm, handmade character without making it feel heavy.
