The mature age of the vineyard and the hard layers of the limestone soil result in low yields, a natural concentration of powerful flavors and aromas in the grape. After manual harvest, gentle fermentation and maceration for 20 days, the wine was aged in 300 liter French oak barrels for 18 months.
